The new partnership is rooted in the local landscape, between the silver Argentario coast and the rolling Tuscan countryside, weaving together local cuisine, expert winemaking and warm hospitality to offer an authentic and fresh perspective on this corner of Tuscany. It brings together two established properties that share a mutual devotion to the local terroir and a pursuit of excellence.
At Argentario’s award-winning fine dining restaurant, the Dama Dama, Executive Chef Emiliano Lombardelli has worked to bring this collaboration to life with his unique culinary approach that is created using seasonal ingredients and a precise balance of culinary skill and personal intuition. The result is an experience defined by ‘subtraction’ that strips away the unnecessary to let the true identity and full flavour of the ingredients shine.
The Dama Dama Restaurant, the gastronomic soul of the Resort, recently unveiled a stunning new redesign by Milan-based interior designer Andrea Fogli. Charcoal-grey walls and floors, tactile materials, bronze sculptures, and dramatic lighting create a space that is sophisticated, warm and welcoming with every detail designed to complement the cuisine. The new layout features fewer tables and a comfortable lounge for a more intimate, immersive feel.

The restaurant will also soon unveil aWinery Room that will act as an exclusive space for private tastings and dinners surrounded by the cellar’s finest labels, where the wine takes centre stage.
Here a curated selection of Antinori estate labels will accompany the tasting menu, matching its rhythm and highlighting its nuances across different wine regions and appellations, to take diners on a journey through some of Italy’s most prestigious wine-growing areas.
Le Mortelle, the Antinori’s estate in the heart of the lower Maremma near Castiglione della Pescaia, is nestled in a landscape overlooking the Tyrrhenian Sea. It was specially established here following the conviction that this area, whilst still emerging on the national stage, is exceptionally suited for high-quality wines.
The work in the vineyards and the cellar is meticulous, designed to translate the unique character of the land to the glass. The multi-level winery uses gravity-flow vinification reflecting a philosophy that marries technical research with environmental respect. Visitors can explore this identity through the estate’s signature labels: the white Vivia and the reds Botrosecco and Poggio alle Nane, each an authentic expression of the Maremma soil.

About Le Mortelle
Le Mortelle is situated in the lower Maremma near Castiglione della Pescaia. Owned by the Antinori family, the estate was once part of a larger complex known as "La Badiola," recognized for its potential as far back as the mid-19th century by Leopold II. The Antinori family has deep roots here; an 1863 property deed mentions "Poggio Franco," one of the estate’s most prized vineyards. Since 1999, the family has worked to develop the vineyards and the gravity-flow cellar, convinced that this terroir can produce world-class wines.
